蘆筍炒牛肉的原料: 野蘆筍500克,牛肉150克,紫皮蒜1頭,小米椒4個,油,鹽,味素野蘆筍炒牛肉的做法:
1、 野蘆筍去老根、老皮,斜切成段;牛肉切絲;蒜拍碎,米椒斜切。
2、 牛肉絲用老抽、蚝油、生粉、油拌勻,醃製片刻。
3、 野蘆筍段下沸水中焯一下,瀝乾;坐鍋熱油,下牛肉絲滑炒熟,盛盤待用。
4、 留底油,加大火力,下蒜茉爆香,接著下米椒和野蘆筍迅速翻炒,放鹽調味。
5、 最後放牛肉絲、味素(也可不放)炒勻。
製作貼士:
野蘆筍富含葉酸,不易旺火爆炒,最好事先焯半熟
