菜名:涼拌白蘿蔔
原料:白蘿蔔300g、香菜20g、紅椒1個
調料:2大勺油、香醋1/2湯匙、糖2茶勺、鹽2茶勺、香油、 麻油
做法
1、白蘿蔔洗淨剝去皮,切成薄片後切細絲。
2、放入一個大碗裡,放入1茶勺鹽,用手抓擰均勻,放10分鐘(有出水後),然後擠乾水分備用。
3、紅椒去蒂洗淨切細絲;燒一鍋開水,紅椒放入燙5秒撈出,過冰水後瀝乾水分備用。
4、香菜洗淨切寸段備用。
5、取一個大一點的碗,把白蘿蔔、香菜、紅椒放在一起,調入半茶勺左右的鹽、糖和香醋。
6、起油鍋,倒入2大勺油,等油熱到幾乎要冒煙(7成熱),關火。
7、把油淋在步驟5的上面(會聽到吱吱的聲音)再滴幾滴香油,攪拌均勻即可。
8、最後吃的時候澆一點麻油,真是美味極了
小貼士:
1、蘿蔔絲切得越細口感越好。
2、涼拌用的蘿蔔選擇水蘿蔔又名白蘿蔔,肉嫩,口感爽脆微帶甜,少了幾分辛辣。
3、最後一定要用熱油淋在上面,菜的香味會完全揮發出來。
