甘肅特色菜餚,尤多見於古城敦煌。菜其實就是茄子、辣子、西紅柿炒在一起,也可以叫素三鮮。茄子、青辣椒、西紅柿原本種在一地,採摘容易,而且成本低廉,烹製也簡單。

基本步驟

原料:茄子300克、青椒2個、西紅柿1個、大蒜2瓣。

做法:

1、將茄子、青椒、西紅柿洗淨,蒜剝皮待用。

2、茄子切片,青椒切絲,西紅柿切塊,蒜切片。

3、熱鍋倒油,油量與平日炒菜一樣。油溫熱後,放入蒜瓣爆香後,放入茄子片,調入鹽,炒軟。

4、在茄子中加入西紅柿塊,繼續翻炒至西紅柿出紅湯後,加入青椒絲,翻炒一分鐘後,調入適量生抽、白糖,炒勻後即可起鍋。

註:

1、茄子用圓茄子、長條茄子都可以,但是建議切片,更容易炒軟入味。

2、喜歡口味酸點的,可以多放西紅柿;喜歡辣口的,青椒改為辣椒;喜歡吃茄子的,茄子可以多放。總之食材的量可以根據自己喜歡增減。

3、如果要拌麵的話,西紅柿可以炒軟點。如果只是配米飯,西紅柿翻炒的時間可以適當縮短。

4、強烈推薦茄辣西拌麵,超級好吃。
